粉絲泡軟後跟切細的韭菜先炒並調味,盛起備用。鍋裡放一張大號墨西哥餅皮,把韭菜餡均勻鋪滿在餅皮上,用三個蛋打成蛋花略調味,均勻的澆在韭菜餡上,上面再蓋一張大號墨西哥餅皮。先蓋上鍋蓋用中小火悶一下,讓蛋熟,再開蓋兩邊煎黃,就可以拿起來切了。吃的時候,皮跟餡不會分開
